Fajitas

The ingredient of Fajitas

  • 8 flour tortillas
  • 2 teaspoons olive oil
  • 500g beef rump steak thinly sliced across the grain
  • 1 medium brown onion halved thinly sliced
  • 1 medium green capsicum halved deseeded thinly sliced
  • 2 tablespoons barbecue sauce
  • 2 teaspoons mexican mild spice powder
  • 80g 1 cup coarsely grated cheddar
  • 1 ripe avocado halved stone removed peeled thinly sliced
  • tomato corn salsa
  • 2 corn cobs husks and silks removed
  • 2 ripe tomatoes finely chopped
  • salt freshly ground black pepper

The Instruction of fajitas

  • to make the tomato corn salsa cook the corn in a large saucepan of salted boiling water for 5 minutes or until tender refresh under cold running water drain well use a small sharp knife to cut down the length of the corn cobs close to the cores to remove the kernels place the corn in a medium bowl
  • add the tomato to the corn and gently toss until just combined taste and season with salt and pepper set aside until required
  • preheat oven to 160u00b0c wrap the tortillas in foil place in preheated oven for 10 minutes or until heated through remove from oven
  • meanwhile heat oil in a large frying pan over high heat add beef and cook stirring for 2 3 minutes or until brown all over transfer to a heatproof bowl add onion and capsicum to the pan and cook stirring for 5 minutes or until onion softens add beef barbecue sauce and mexican spice powder and cook stirring for 1 minute or until heated through remove from heat and set aside
  • place beef mixture cheese and salsa in separate serving bowls place tortillas and avocado on serving plates allow kids to assemble and roll their own fajitas
