Wholemeal Sesame Damper



Nothing is more Aussie than damper. Serve this wholemeal version as a delicious side to a barbecue.

The ingredient of Wholemeal Sesame Damper

  • vegetable oil for greasing tray
  • 75g 1 2 cup sesame seeds
  • 320g 2 cups wholemeal self raising flour
  • 300g 2 cups self raising flour
  • 1 2 teaspoon salt
  • 250mls 1 cup milk
  • 120g 1 2 cup plain yoghurt
  • 1 tablespoon extra milk or water

The Instruction of wholemeal sesame damper

  • preheat the oven to 200u00b0c lightly brush a baking tray with the vegetable oil to grease
  • spread the sesame seeds evenly over a clean baking tray and toast in preheated oven for 5 minutes or until lightly browned reserve 1 2 tablespoons of the seeds for the top of the damper
  • sift the flours and salt into a large mixing bowl returning the bran to the bowl stir in the toasted sesame seeds make a well in the centre and add milk and yoghurt mix quickly and lightly with a fork until combined bring dough together with your fingertips and turn onto a lightly floured surface knead gently with floured hands and form into a ball place on greased tray and flatten to about 18 20cm in diameter use a floured sharp knife to cut a deep cross in the centre of damper brush with the extra milk or water and sprinkle with reserved sesame seeds
  • bake in preheated oven for 25 minutes reduce oven temperature to 180u00b0c and bake for a further 5 10 minutes or until damper sounds hollow when tapped serve warm or allow to cool
