Mini Date And Walnut Loaves

The ingredient of Mini Date And Walnut Loaves

  • 1 cup pitted dates chopped
  • 80g butter
  • 1 3 cup brown sugar
  • 1 teaspoon vanilla essence
  • 1 1 2 cups walnuts
  • 1 coles free range egg lightly beaten
  • 1 1 4 cups self raising flour
  • 60g butter at room temperature chopped
  • 1 tablespoon glace ginger chopped

The Instruction of mini date and walnut loaves

  • preheat oven to 190c or 170c fan lightly grease an 8 hole mini loaf tin 150ml capacity line with strips of non stick baking paper extending over the two long sides combine dates butter and sugar with 3 4 cup water in a small saucepan stir over low heat until butter has melted and sugar has dissolved bring just to the boil then turn off heat and transfer to a mixing bowl to cool until just warm stir in vanilla
  • spread walnuts on an oven tray and bake for 5 mins or until lightly toasted lay out on a board to cool roughly chop walnuts and stir into the date mixture fold in egg and flour
  • spoon mixture into the loaf tins bake for 20 mins or until risen brown and firm to a gentle touch
  • use a spoon to mix butter and ginger together until well combined serve with the muffins
