- 450g pkt coles brand long grain white rice
- 2 teaspoons grated lemon rind
- 2 tablespoons lemon juice
- 1 4 cup 35g dried cranberries
- 1 4 cup 35g chopped dried apricot
- 2 tablespoons chopped pistachio kernels
- 2 tablespoons chopped flat leaf parsley
- lemon wedges to serve
